Mission

Georg Schröppel: There were several stations on my way to becoming a chef. In July 2003 I met chef Thomas Keller, The French Laundry. He influenced me a lot. Through him I learned to recognize connections. I learned about the physical side of cooking, like making 300 meals in one night. He also taught me the importance of involving others and that what really matters in a restaurant is the guests: it's about entertaining them. One is constantly surrounded by inspiration. Inspiration is never limited to one thing. You can find them in many different places, but you cannot predict them. You simply perceive them and make them your own.
